MAKE CANDIED WALNUTS

Melt the sugar in a pot on low heat

Once sugar has melted, add the walnuts and coat them in sugar (heat off)

Let the walnuts cool down on a sheet of parchment paper

RED CABBAGE Now finely chop red cabbage

SHRED CARROT

Chop golden delicious or granny smith apples finely

Mix well

Chop the candied walnuts into small bite-sized pieces

Add olive oil, apple cider vinegar and salt +pepper

Mix again - and serve as a side

Enjoy the rainbow-coloured slaw!

Perfect with a serving of pumpkin soup
