Our fried eggplant recipe is super crunchy outside and tender inside; we make for vegetarians and vegans.

STEP 1: cut the eggplant into ⅕ to ¼-Inch slices.

STEP 2: To a container, mix breadcrumbs, cheese, salt, and pepper.

STEP 3: To a bowl, mix chickpea flourwater, and salt, until you get a smooth batter

STEP 4: Bread the eggplants. Dip in the batter, and cover in bread mix.

STEP 5: Fry the eggplants. See instructions + tips on our blog.

STEP 6: After 6 mins, remove eggplant out of the oil and place on paper towels to absorb excess oil

TIP: serve with our Italian salad and mayonnaise.

TIP: you can also serve on pasta with marinara sauce on top.

VARIATION: Bake in the oven (breaded eggplant)
