Farro salad is refreshing and delicious, thanks to chewy farro, crunchy veggies, and a tasty Italian dressing.

STEP 1: Cook the farro until it's cooked al dente (about 20 minutes), stirring occasionally.

STEP 2: Prep and chop the veggies, parsley, and pumpkin seeds.

STEP 3: Make the mustard dressing and shake well.

STEP 4: Add all ingredients to a bowl with the cooked farro. Drizzle with mustard dressing.

Toss well, and let the flavors meld for at least 15 minutes before serving.

VARIATION: add feta for a protein-packed meal.
