Farinata or socca is an easy recipe made by mixing chickpea flour and olive oil. A simple appetizer, and gluten-free too!

STEP 1: Add chickpea floursalt, and water to a bowl and blend for 3 to 5 minutes till smooth

STEP 2: Gently pour the chickpea batter into the center of a pan or skillet, already with oil.

STEP 3:  Bake for 10 minutes, then grill for another 10 minutes.

STEP 4: serve immediately, but cut into slices first.

Sprinkle with parsley, and serve with tapenade, or pesto.

A vibrant and healthy starter!
