Our eggplant soup is a light, healthy, and tasty dish that is easy to make with a few simple, fresh ingredients.

STEP 1: Arrange eggplant, garlic, and cherry tomatoes on a baking trey.

STEP 2: Roast the vegetables for 40 minutes until the eggplant is fully cooked inside.

STEP 3:  Add eggplant flesh to a large pot with oil, onion and red pepper flakes.

STEP 4: Add the vegetable broth and simmer for 15 minutes.

STEP 5: Blend the soup until you reach your desired texture.

Serve and garnish with fresh parsley, basil or thyme.

You can add croutons, or roasted chickpeas on top.

Or serve it with homemade crostini bread.
