Eggplant salad is an easy and delicious recipe made with roasted eggplant, chickpeas, and fresh seasonal vegetables.

STEP 1: Roast eggplant for 20 minutes, flip with a spatula, and roast for 5 to 10 more minutes.

STEP 2: Chop veggies, onion, olives and herbs. Drain chickpeas.

STEP 3: Season with olive oil, salt, pepper. When the eggplants are cooked, add them to the bowl.

STEP 4: Mix well, taste, and adjust for salt and lemon juice. Serve as is, with a slice of bread.

OPTION 2: Add bow tie pasta for extra protein and grain.

It's a delicious, wholesome and naturally vegan dinner.
