Learn how to make homemade and crispy bruschetta with  eggplant in tomato sauce.

STEP 1: Chop tomatoes and add to a large pan with oil, garlicsalt, pepper, and red pepper flakes.

STEP 2: Sauté on medium-high heat for 5 minutes, then crush them with a fork.

STEP 3: Add eggplant to the pan with water. Cover with a lid and gently simmer for 15 minutes.

STEP 4: Take the lid off and cook for 5-10 minutes until the sauce gets thick and all the water has gone

STEP 5: Add fresh basil leaves and give it another stir.

STEP 6: Turn on the grill function of your oven. Slice the bread, and bake.

Add the eggplant topping to the toasted bread. Serve with basil leaves.

A perfect appetizer, and side dish!
