Bell Peppers

Bell Peppers Onion Parsley Rice Red Lentils Veg broth Canned tomatoes Soy yoghurt Vegan Ricotta


You can use any of your favourite grains and legumes in this recipe

Start with 1 cup rice and 1 cup of lentils. I also use 1 onion to give flavour

1 can chopped tomatoes

I add water + veg stock for additional flavour

Let simmer for 10 minutes

Meanwhile cut and clean peppers

Add parsley to the sauce

BEST PART: stuff the bell peppers

Top them with your favourite vegan cheese. I use vegan ricotta. Linking recipe here :-)

Aaaaand vegan yoghurt. This one is soy, unsweetened
