You can make it in 5 minutes with 7 ingredients in a blender. This recipe is healthy, dairy-free, vegan, and gluten-free.

STEP 1: To a blender add all ingredients: cilantro, lime juice, maple syrup, garlic, peeled and grated ginger, salt, and olive oil.

STEP 2:  Blend for a couple of minutes until smooth. Taste and adjust for salt and lime before serving.

STEP 3:  Store in the fridge for up to 5 days, or freeze in a jar or in an ice cube trays for up to 6 months.

SERVE: on your favorite veggies and legumes (here with honey roasted carrots and beans.)
