This chickpea quinoa salad is a quick and healthy recipe made with fresh and nutritious ingredients in less than 20 minutes.

STEP 1: Rinse and drain uncooked quinoa, then add it to a pot with water and salt. While it cooks, prep the veggies.

STEP 2:  Cut tomatoes, cucumber, and bell pepper into small dice. Chop parsley, red onions and rinse chickpeas.

STEP 3:  Make the mustard dressing with lemon, oil, garlic, mustard and salt.

STEP 4: Pour the dressing into the bowl, and mix till the ingredients are well combined. 

STEP 5: Serve immediately or let it sit in the fridge. It keeps 3 days in the fridge.
