Roasted cauliflower salad is a creamy and delicious dish you can make with little effort and simple ingredients.

STEP 1: Get your ingredients ready.

STEP 2:  Season cauliflower florets with oilsalt, and pepper, and toss them with your hands.

STEP 3:  Roast in the oven for 30 minutes.

STEP 4:  Make the tahini sauce. Mix well.

STEP 5: Toast drained and rinsed chickpeas for 10 minutes, moving the chickpeas around often.

STEP 6: Mix ingredients and drizzle with tahini sauce.

Serve as a healthy lunch or light dinner with rice or toasted bread.

VARIATION: add cherry tomatoes for extra color and juicy-ness.
