Roasted cauliflower florets meet delicious garlic and olive oil sauce, plenty of fresh parsley, lemon zest, and toasted pinenuts.

STEP 1: Get your ingredients ready.

STEP 2:  To a large skillet, add olive oilminced garlic, and chili flakes. Fry the garlic on medium-low heat for one minute.

STEP 3: Add the finely chopped parsley and a pinch of salt, and fry for one more minute.

STEP 4: Add in roasted cauliflower florets, and toss on medium heat for 30 seconds.

STEP 5: Cook for 1 min, add grated parmesan, some reserved pasta water, and lemon juice, and stir until the cheese melts.

Garnish with toasted pine nuts, grated lemon zest, chopped parsley, and black pepper.

Enjoy as a light and veggie-packed dinner.
