You'll love this veggie-packed Alfredo because it's a million times lighter than the original Alfredo, and ready in 30 minutes.

Get your ingredients ready

STEP 2: Cut the cauliflower into chunks, then steam or boil it until very tender (about 15 - 20 minutes).

STEP 3: To a blender, add cooked cauliflowermilkparmesanricotta, garlicmustardgrated nutmegsalt, and black pepper. Blend until smooth.

STEP 4: Add the sauce to a large skillet on medium heat, toss in the pasta, and, if necessary, add a ladleful of reserved pasta water.

STEP 5: Toss until the pasta is fully coated in the sauce.

Serve immediately with a sprinkle of finely chopped parsley and freshly ground black pepper.

To make this recipe even more delicious, oven bake or air fry a bunch of cauliflower or broccoli florets and toss them in.
