Butternut squash pasta is creamy, tasty, and so incredibly simple you can make it any day of the week with minimal effort.

STEP 1: Transfer roasted butternut squash to a food processor and add ricotta cheese, parmesan cheese, salt, pepper, thyme leaves, and water.

STEP 2: Blend until you have a smooth sauce, then transfer it into a large pan.

STEP 3: Cook the pasta al dente in a large pot with salted boiling water. Reserve one cup of pasta water, drain the pasta and toss it in the sauce.

STEP 4: Stir for half a minute on medium heat. Add some reserved pasta water if necessary.

STEP 5: The pasta should be covered in the sauce. Taste with salt and pepper.

Serve the butternut squash pasta with fresh thyme lavespistachio nuts, and optionally a sprinkle of grated parmesan cheese.

It's a delicious and easy pasta dinner, comforting and wholesome!
