With only seven ingredients and in about 30 minutes, you can make the best broccoli soup you've ever had from scratch!

FIRST: Get your ingredients ready.

STEP 1: Cut the leek in half lengthwise, finely chop it and add it to a dutch oven or a pot with the butter. Fry gently on low heat for 5 minutes until the leek is soft.

STEP 2: Add chopped broccoli, diced potatoesfresh thyme leavessalt, and black pepper to the pot.

STEP 3: Cook on medium heat for two minutes. Stir often.

STEP 4: Add the vegetable broth and simmer for 20 to 30 minutes, or until the potatoes and the broccoli are fork tender. Stir occasionally.

STEP 5: Blend the veggies with an immersion blender until smooth; don't over-blend.

Taste, adjust for salt, and serve in a bowl. You can sprinkle with red pepper flakes, and olive oil.

Enjoy as a healthy starter or side dish for autumn and winter.
