This recipe is healthy, without eggs and frying. Instead, you can bake the breaded eggplants in the oven or in the air fryer.

STEP 1: Combine breadcrumbs, vegan parmesan cheeseand spices.

STEP 2: Wash the eggplant, and cut it into ¼-inch thick disks.

STEP 3: Dip eggplant slices into plant milk, then into the breadcrumb mixture until well coated.

STEP 4: Arrange breaded eggplant onto the baking sheet, and drizzle with olive oil.

STEP 5: Bake at 400°F for 20 - 25 minutes, flip after 15 minutes.

Serve with marinara sauce as a starter or side dish.

Or serve on pasta for an easy Italian dinner.
