This black bean salad with roasted sweet potatoes, fresh veggies, and a cilantro lime dressing is a winner.

STEP 1: Rinse, then boil the black beans in a large pot with lightly salted water for 1-1.5 hours.

STEP 2: Peel and chop the sweet potatoes into 1-inch cubes. Roast for 25 minutes.

STEP 3: Make the dressing in a blender: cilantro, lime juice, maple syrup, garlic, peeled and ginger, salt, and olive oil.

STEP 4: Mix black beans, avocado, chopped onion,  jalapeñossweet potatoescorn, and green bell pepper.

Toss well, and let the flavors meld for at least 15 minutes before serving.

VARIATION: add quinoa for a complete meal.
