This fresh and healthy arugula pesto tastes wonderful over pasta and salads. We keep the recipe dairy-free so anyone can enjoy it.

STEP 1: Peel and cut the garlic in half lengthwise, remove its core, if any, and add it to the food processor.

STEP 2:  Add almonds, pine nuts, nutritional yeast, and salt.

STEP 3:  Blend until you get a finely coarse texture (1 minute).

STEP 4: Add arugula leaves, olive oil, and ice-cold water.

STEP 5: Pulse a few times until the arugula is fully incorporated with the other ingredients.

A protein-rich, and healthy lunch idea!

And a perfect condiment for potato salad too!
