Bread crumbs made from stale bread are a staple ingredient allover Italy.
In the south, where parmesan wasn't always available (parmigiano reggiano is from the north of Italy - Emilia Romagna - and in the past was considered a luxury good and wasn't always available to poorer families) people came up with an ingenious way to replace it and to make their pasta dishes even more delicious.
Lucky for us, it is also naturally vegan and it's super simple to make.
- 400 grams bread crumbs
- 4 tbsp extra virgin olive oil
- 1 clove garlic grated
- 1 tsp salt
- In a bowl, mix all the ingredients together with your hands.
- On a non-stick pan, cook the seasoned bread crumbs until golden and crispy.
- Store in an airtight container for up to one week. Sprinkle on dishes like if it were parmesan cheese.
