Our homemade gnocchi recipe makes soft and delicious potato pillows with three simple ingredients and a fork.

STEP 1: Bring potatoes to boil and cook until fork tender (20 to 50 mins).

STEP 2:  Drain the potatoes and peel them while still hot.

STEP 3:  In a large bowl, mash potatoes with a fork or potato ricer.

STEP 4:  Add flour and salt, and knead until you get a compact but soft dough.

STEP 5:  Divide the dough into four pieces. Roll it into ropes, about ¾ inch thick.

STEP 6:  Cut into small pieces and shape with a fork.

COOK: in boiling water. When they float to the top, they are ready.

SERVE: mixed with your favorite tomato sauce or pesto.
